white pizza recipe

A few days ago I mentioned making our favorite white pizza for dinner on our anniversary. As promised, here’s my recipe! I have no idea if this is actually a pizza that you could find at a restaurant and I don’t really use any measurements. My good friend used to work at an Italian restaurant and this wasn’t on their menu, but she’d just make it for herself (and me!) once in awhile. Soooooo good. So now I make my own.

Okay, for this particular dinner I was super lazy and bought a pre-made crust and pre-cooked and cubed chicken. It can’t get any easier than that!! But I usually make my own dough and roll it out and cook and cut my own chicken. But anyway….

I have all the ingredients set out and ready to go. Pizza crust, olive oil, ricotta cheese, feta cheese, chicken and garlic. There is no sauce on this pizza so to make sure it isn’t too dry, I start out with some olive oil. First, I use a fork to poke some holes in the pizza crust so the oil is absorbed, yummy! I think I learned that from Rachael Ray 😉

Then I spread on the ricotta. Use as much as you want. I buy the smaller container and use about half of it or enough to cover the crust with a little bit of extra. Depends how much you like ricotta! 🙂

Then I sprinkle on the feta cheese. Again, I buy the smaller size container of whatever brand of feta is on sale. We’re big fans so I put the whole container on, but feta has a distinct taste and if you aren’t in love with it, just put on less. But trust me, it’s soooo good!

That would be Ryan’s hand in the picture above–sneaking some feta cheese, looks like we have another cheese lover in the family! He was an awesome helper.

Then I add the chicken. Since I took the cheater’s way out, I just opened the package and threw it on there. Otherwise, cook about 2 chicken breasts and chop them into small pieces.

Garlic! Again, big fans over here. If something calls for a clove, I put in… 5. So use your own judgement here. For this pizza, I only chopped up 4 cloves and I should have chopped up more–it adds tons of flavor. Steve added some garlic salt after the pizza came out of the oven. To give you an idea, this is how much I had that I sprinkled on top:

And that’s it! It’s so easy! And soooo good. I put it in the oven at 350 for about 20-30 minutes. I forgot to take a picture after it came out of the oven because… we were hungry and we couldn’t wait to eat it and I forgot. But here’s a pre-oven picture:

*pizza crust (pre-made or homemade dough)
*olive oil (just enough to cover the crust)
*ricotta cheese (half a small container or to taste)
*feta cheese (entire small container or to taste)
*chicken (1-2 chicken breasts, cooked and cubed)
*garlic (1-5? cloves, whatever your preference!)

Throw all the ingredients on the crust, it’s really that easy.

BAKE at 350 degrees for 20-30 minutes–until pizza is as browned and crispy as you like.

REVIEW: One of our all-time favorites and a new favorite for Ryan too. Feta cheese can be expensive so buy it on sale. If you make your dough and chicken, it saves money too (unlike taking the cheater’s way out like I did with everything pre-made). Really easy and quick and really good!
