Cream Cheese Chocolate Chip Dip

I can’t remember where I first saw this–on pinterest or on stumble–but I think I instantly started drooling. Two of my all-time favorite things: chocolate and cream cheese (which I’ve been known to eat straight out of the bowl with a spoon).

I thought… who eats this?! A BOWL of cream cheese chocolate chip dip?!?!?! And I knew I just had to make it. Immediately. It’s really easy and really delicious.

6 ingredients, not bad. (btw – the recipe calls for vanilla extract, but I substituted with maple syrup)

First, melt 1/2 cup (1 stick) of butter on medium heat in a small saucepan.

Add 1/3 cup of brown sugar.

Whisk it together until the sugar dissolves and the mixture starts to boil.

Add 1 teaspoon of maple syrup.* Remove the pan from heat and set it aside.
*maple syrup was my idea–typically you’d use vanilla extract.

In another bowl, combine 8oz of cream cheese (1 block) and 1 cup of powdered sugar.

Mix together on low speed.

Add the liquid mixture to the cream cheese/sugar and mix.

Yummmmm.

Stir in your mini-chocolate chips! I used about a cup or a little less.

I think this would be REALLY good with graham crackers, but we didn’t have any. Thanks to having a 2-year-old son, however, we did have animal crackers and they were perfect. Or eat it like my mom–with a spoon right out of the bowl 😉

~1/2 cup (1 stick) of butter
~1/3 cup brown sugar
~1 teaspoon vanilla (or maple syrup!)
~8 oz (1 block) cream cheese
~1 cup powdered sugar
~1 cup mini-chocolate chips
~things to dip: graham crackers, animal crackers, etc.

2. Add brown sugar and stir until dissolved and the mixture bubbles.
3. Remove from heat and set aside.
4. In another bowl, mix together cream cheese and powdered sugar.
5. Add liquid mixture and mix.
6.  Stir in chocolate chips.
7. Serve!
