I. hate. meal. planning.

~I received meal planning services from eMeals to facilitate this review. All opinions are my own!

You’d think this far into my “wife” and “work-at-home-mom” career thing I’d be used to planning dinners and cooking. Nope. Not a fan. When I cook, I HAVE to have a recipe, I’m terrible at throwing things together… so for me, the hardest part about cooking is figuring out what in the world to make! I realized that if I sat down every weekend and figured out meals for the next week–and then went to the store for

Lasagna Cupcakes recipe

Mmmmmmmmm… lasagna in cupcake form! I saw this on Pinterest (duh) and got the recipe from Lauren’s Latest. I changed it a little bit, mainly based on what I had on hand (or, more so, what I didn’t.)

If you have your own awesome lasagna recipe (because I think most people do), you can totally just use that… instead of your typical 9×13 pan, you use a muffin tin and get fancy looking (and delicious tasting) lasagna cups!

Pizza Puff Bites

These are soooo easy to make and are so delicious! Great for a snack, side dish, or appetizers at a party! Depending on the ingredients you use, too, you could whip this up in no time at all. Here’s what I used: 6 ingredients (plus cooking spray for the pan).

6 ingredients, not bad. (btw –

chicken pesto pasta: #GrilledEssentials

Hillshire Farm has come out with a brand new product, Grilled Essentials. They’re packs of 2 grilled chicken breasts that come in different flavors. I used to be a vegetarian so let’s just say I hate cooking raw meat. Sometimes I cook it for my family to eat, but I won’t eat any of it. Buying something like this that’s pre-cooked and ready to go? Totally awesome.

AND it saves so.much.time. Another huge plus for all you busy mamas. When I made this dinner, Steve
