Tasty Tuesday: Tuna Biscuits

This is one of Steve’s recipes (he’s the cook!) that Ryan loves. He makes many variations of it, but the basics are here with one of his sets of spices.

Ingredients:
1 can tuna
1 roll/can grands biscuits (we like the low fat b/c they don’t have trans fat)
1/4 C shredded cheese (optional)
1 1/2 T Mayo (we like HMan’s light)
1 tsp Spicy Mustard (we like Durkee’s)
4 “cracks” of garlic salt from a grinder
1/8 tsp basil
1/8 tsp Mrs. Dash Original
2 tsp wheat bran (Optional, Steve likes to sneak fiber into Ryan’s diet wherever he can!)
(Other optional: spinach, green onion, tomatoes, etc)

Utensils needed:
Cookie/baking sheet
Spoon
Measuring cups/spoons
Medium sized bowl

Directions:
1. Preheat oven to 350 degrees
2. Mix Tuna, mayo, mustard and cheese
3. Add seasonings and mix well
4. Split the 8 raw biscuits in half and and lay out on cookie sheet
5. Spoon 8 even amounts of mixture onto biscuits
6.  Cover 8 bisccuits
7. Bake ~ 12 minutes depending on preference (we like them just barely browned)

Commentary
Note: the tuna mix in the biscuits will hold heat for a long time so be careful! As far as healthiness goes, the bran  and tuna help make up a little bit for the mayo, cheese and empty carbs from the biscuits (Steve usually adds chopped veggies). The time required is about 10 minutes of prep and 12 minutes to cook. Cleanup is easy. Most of the ingredients are already in the fridge/spices cabinet, so the cost is really cheap. All you would need to buy are biscuits (there are always coupons available for Pillsbury products), tuna, cheese and maybe bran (optional).

Ryan’s review
Ryan usually eats one whole tuna biscuit and loves the leftovers for lunch the next day. Once the mixture cools and hardens a little it is easy to tear into small pieces and let him eat on his own (without making a mess!). This is one of Ryan’s favorites that we make every other week.
