Tasty Tuesday! Banana Pancake Bites

Mmmm, Ryan LOVES these! They’re cute, tasty, cheap and fairly easy to make. This is the second time I’ve made them and it’s a great breakfast, lunch or dinner (or snack) for the whole family. We just had it for dinner tonight!

Bananas are a must-have for this, but you can experiment with other things too. Tonight we tried blueberries and strawberries, too. So… you need pancake batter. If you make your own, you’re a better person than I! 😉 I used a mix. Add 2 cups of mix, 2 eggs, 1 cup of milk, stir it up–good to go!

Then you need your fruit. I used 1 banana cut in slices, 3 strawberries and a handful of blueberries. I figured Ryan wouldn’t eat all of that anyway and this was just an experiment with the strawberries and blueberries.

Get your frying pan and stove ready… then all you do is dip the fruit in the pancake batter until it’s coated all the way around. Kind of time consuming, but SUPER easy.

By the time you’re done filling the pan with your pancake bites, it’ll be time to start flipping the first ones you put down, so this part goes pretty quickly.

Same for the strawberries and blueberries…


I’ll say that the blueberries were slightly more difficult to make. Harder to coat in batter and harder to fry… I just kind of had to stir them around to make sure all the batter cooked and tried to not get them all stuck together. I probably wouldn’t make this again with blueberries. But using the sliced strawberries was just like using the sliced bananas.

YUMMM!!!! How good do those look?! I grabbed a couple before handing the plate off to Ryan. The bananas are in the back, then the blueberries and the strawberries in the front. MMmmmm. So how’d they taste? Well, we’ve got some breaded bananas, which are my favorite. The blueberries and strawberries were super soft and juicy… I didn’t like the blueberries, but I guess I’m not a huge fan to begin with. The strawberries were good, though!

And what’d Ryan think?


I think he had shoved like 3 bites in his mouth in this picture, haha. We find that Ryan eats best (the most) when we let him feed himself and “graze.” So we put a plate on his table and let him have at it. His favorite? The banana pancake bites. I don’t think he ate any of the blueberries (we didn’t think he would) and he took the strawberries bites out of his mouth, haha.

For some fun? You can dip the bites in some maple syrup or–our favorite–put a little peanut butter on top! Ryan loves that too.

Overall: easy, cheap and delicious! Oh, there’s also lots of pancake batter leftover to make some pancakes for the adults 😉 Who doesn’t love breakfast for dinner?!
