Chunky Pumpkin Spice Cookies with cream cheese icing

When October hits, I’m one of those people that run out to get everything ready for fall, including pumpkin, pumpkin, and MORE PUMPKIN. I decorated for Halloween at the end of September. easy coffee cake crumble… in a cup!

So awhile ago I saw something on Pinterest about a brownie in a cup. Say whhhhhat?! I mean, the idea is so totally simple, yet I never ever would have thought of it. Maybe because I will always prefer making an entire tray of brownies to eat instead of just one, haha. But for real, how cute is a brownie in a cup?! So much fun for your kids to make or to serve at a dinner party!

chocolate chip peanut butter cup cookies

I found this recipe on Pinterest (where else), but it makes a massive amount of dough and had some random measurements (like using 1 cup + 2 T of sugar). Maybe it’s just me and the way I bake/cook, but I’m not that exact about anything lol. About a cup works for me! So here’s my take on it… like I said, this makes a LOT of dough (enough for 4-5 dozen cookies). Divide it in half and you’d be fine, unless you’re heading to a party.
