I found this recipe on Pinterest (where else), but it makes a massive amount of dough and had some random measurements (like using 1 cup + 2 T of sugar). Maybe it’s just me and the way I bake/cook, but I’m not that exact about anything lol. About a cup works for me! So here’s my take on it… like I said, this makes a LOT of dough (enough for 4-5 dozen cookies). Divide it in half and you’d be fine, unless you’re heading to a party.
3 and 1/2 cups of flour
1 1/4 t baking soda
1 1/2 t baking powder
1 1/2 t salt
1 1/4 cups of butter (that’s 2.5 sticks)
1 1/4 cups brown sugar
1 cup of granulated sugar
2 large eggs
2 t vanilla extract
1 package (~12 oz) of mini chocolate chips
mini Reese’s peanut butter cups (~50-60, frozen, unwrapped)
Preheat oven to 350 degrees.
Whisk together the first 4 ingredients (flour, b. soda, b. powder and salt) in a medium-sized bowl, set aside.
Mix butter, brown sugar and granulated sugar until creamy. Add eggs 1 at a time and mix in. Add vanilla.
Add your bowl of dry ingredients slowly (with mixer on low so it doesn’t fly all over!) to the mix until it’s all combined.
Stir in your mini chocolate chips.
Use mini muffin pans (ungreased) and fill each about half way with dough. I also used a mini-heart shaped silicone tray and that worked well, too.
Bake for about 8-10 minutes (or about 2 minutes before they’re really done). Remove your pans from the oven and press a mini Reese’s cup in the middle of each one. Bake for another minute or two. Let them cool before removing… EAT!
Makes 4-5 dozen.
Yummy and indulgent : )
